Made in La Mancha (in Spain), Iberico cheese is well-balanced and full of flavor with a mild sharpness, it pairs well with stone fruit or membrillo (quince jam). It is aged 50 days. Queso Iberico is made from a mixture of cow's, sheep's, and goat's milk. Depending on the time of year, varying amounts of milk from each animal is used to blend the perfect balance of flavours. Only the cheese maker knows what blend is required, and that skill is used year round to make this fabulous cheese.
