Recipe - (Not your average) Cheeseburger (National Cheeseburger day)

In celebration of national Cheeseburger day (coming up September 18th), I thought it only fair to post my world famous (in my head) cheeseburger recipe. I do promise it will challenge conventional wisdom but deliver on flavour. It will be your go-to recipe.

Ingredients:

  • 2lbs grass fed organic ground beef 
  • 1 medium white onion (chopped fine)
  • 2 dill pickle (chopped fine)
  • 120g of cooked chopped (small pieces) bacon
  • 2 tbsp. Worcestershire Sauce (they have GF versions if you need)
  • 1/2 cup grated raw milk cheddar 
  • 1 Egg
  • 6 Slices of raw milk cheddar to top the burger (because "too much cheese", said no-one ever!)
  • 6 Burger buns (I personally like a brioche burger bun)
  • Arugula or your favourite lettuce
  • Sliced Tomato (optional)

Method:

  1. Preheat grill to 400F
  2. Mix the first 7 ingredients in a big bowl. Form in to 6 equal size (1/3rd lb) patties, and flatten just a little with an upside down plate.
  3. Put in the fridge until you're ready to BBQ (at least 15 minutes).
  4. Put burgers onto grill and use a burger press or flat heavy object to put onto the top of your burgers. This creates a "smashburger" effect and is great with our patty mix.
  5. Heat the buns at the last minute so they don't burn, and serve with your favourite mustard, and lettuce.
  6. Add sliced tomato, if you like.

I like British "chips" to serve alongside, but you can do yam fries, salads, slaw...whatever floats your boat.
