As a chef I love the quality and flavour of these birds. I suggest the 20/20/30/20 cooking method. Cook bird on one side for 20 minutes, repeat on other side, then breast down for 30 minutes, and finally rest covered (breast still face down) for 20 minutes.
You'll love the juicy result this cooking method provides. I use the bones afterwards to make myself some bone broth.
