Etorki is a very well established , Basque-style cheese from the French Pyrenees, made from RAW sheep's milk. The name "Etorki" means "origin" in the Basque language.
This semi-firm cheese has a smooth, velvety, golden-ivory paste and a brown, sometimes rusty, rind. It offers a rich, sweet flavour profile with notes of hazelnut, caramel, and a hint of hay, and pairs well with black cherry jam, apples, pears, and dry white wines, or lighter red styles such as Pinot Noir, or a great Rioja.
