Our new lamb supplier, Lumina, hails from New Zealand. As most of you know, we always buy local if we can, but the quality of this meat is so good that I had to make an exception. It is truly exceptional and I am very proud to put the "HOTRO Signature" label to this amazing lamb. The lambs are grass fed and finished on chicory for 30 days.
It is truly the best lamb I have ever eaten. As a chef working with this protein I am in awe of how succulent and tasty it is. The marbling is like Wagyu beef.
