A rich, warming West African-inspired stew made with locally raised BC bison — nourishing, bold, and deeply satisfying.

Why Bison?
Ground Bison (Local BC, Pasture-Raised) is leaner than beef, higher in protein, and raised on BC pastures without hormones or antibiotics. Its slightly sweet, rich flavour pairs beautifully with the bold spices of West African cooking — think peanut, tomato, ginger, and warming spice.
Ingredients
For the stew:
- 500g HOTRO Ground Bison (Local BC, Pasture-Raised)
- 1 tbsp avocado oil or coconut oil
- 1 medium onion, finely diced
- 4 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 1 tsp ground cumin
- 1 tsp smoked paprika
- ½ tsp ground coriander
- ½ tsp cayenne pepper (adjust to taste)
- 1 can (400ml) crushed tomatoes
- 3 tbsp natural peanut butter (no sugar added)
- 1½ cups chicken or beef bone broth (try Nourish Yourself Chicken Bone Broth for extra depth)
- 1 can (400ml) chickpeas, drained and rinsed
- 2 cups baby spinach or chopped kale
- Salt and black pepper to taste
To serve:
- Steamed jasmine rice or flatbread
- Fresh cilantro and sliced green onion
- Lime wedges
Instructions
1. Brown the bison.
Heat oil in a large heavy-bottomed pot over medium-high heat. Add the ground bison and cook, breaking it up, until browned — about 5–6 minutes. Season with salt and pepper. Remove and set aside.
2. Build the base.
In the same pot, reduce heat to medium. Add onion and cook until softened, about 4 minutes. Add garlic and ginger, cook 1 minute more until fragrant.
3. Bloom the spices.
Add cumin, paprika, coriander, and cayenne. Stir and cook for 30 seconds.
4. Add the liquids.
Stir in crushed tomatoes, peanut butter, and bone broth. Mix until the peanut butter is fully incorporated and the sauce is smooth.
5. Simmer.
Return the bison to the pot. Add chickpeas. Bring to a gentle boil, then reduce heat and simmer uncovered for 20–25 minutes, stirring occasionally, until the sauce thickens.
6. Finish with greens.
Stir in spinach or kale and cook 2 minutes until wilted. Taste and adjust seasoning.
7. Serve.
Spoon over steamed rice or serve with flatbread. Top with fresh cilantro, green onion, and a squeeze of lime.
