A Breakfast Taco Worth Getting Up For
Chorizo does not have to come from a packet. A handful of smoked paprika, cumin and dried oregano turns good grass-fed ground beef into something deeply savoury and gently spiced in under ten minutes. Pile it into warm corn tortillas with soft scrambled eggs, a squeeze of lime and plenty of coriander, and you have a breakfast that eats like a weekend treat but comes together on a weekday morning.

- 450 g (1 lb) grass-fed ground beef
- 2 teaspoons smoked paprika
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- ½ teaspoon chilli flakes
- 1 tablespoon apple cider vinegar
- 6 large eggs, lightly beaten
- 1 tablespoon beef tallow or olive oil
- 8 small corn tortillas
- 1 lime, cut into wedges
- Fresh coriander leaves, to serve
- Sea salt and black pepper, to taste
Instructions
- Season the beef. Combine the ground beef with the smoked paprika, cumin, oregano, chilli flakes, vinegar, a generous pinch of salt and plenty of black pepper. Mix with your hands until the spices are evenly distributed and leave to sit for 5 minutes.
- Brown the chorizo. Heat the tallow in a large heavy frying pan over medium-high heat. Add the seasoned beef and press it flat. Leave it undisturbed for 3 minutes to build a crust, then break it up and continue cooking for 5–6 minutes until cooked through and caramelised at the edges.
- Scramble the eggs. Push the beef to one side of the pan. Pour the beaten eggs into the cleared space and stir gently with a spatula over low heat for 2 minutes until just set and still glossy. Fold the eggs loosely through the beef.
- Warm the tortillas. Heat the corn tortillas in a dry pan for about 20 seconds per side until pliable and lightly blistered. Stack them in a clean tea towel to keep warm.
- Build and serve. Spoon the beef and egg mixture into the warm tortillas. Top with coriander leaves, add a firm squeeze of lime, and serve immediately while everything is hot.
