- 8 large eggs

- 1 small yellow onion, finely diced
- 1 red bell pepper, diced
- 1 cup baby spinach, roughly chopped
- 2 cloves garlic, minced
- 2 tablespoons fresh flat-leaf parsley, chopped
- 1 tablespoon fresh chives, snipped
- 1 teaspoon fresh thyme leaves
- ½ teaspoon smoked paprika
- Salt and freshly ground black pepper, to taste

Instructions
- Preheat your oven to 200 °C / 400 °F. Position a rack in the upper-middle of the oven.
- Brown the beef. Heat an oven-safe 25 cm (10-inch) skillet over medium-high heat. Add the olive oil, then add the ground beef. Season with salt, pepper, and smoked paprika. Cook, breaking up the meat, for 4–5 minutes until browned and cooked through. Drain any excess fat and transfer the beef to a plate.
- Sauté the vegetables. In the same skillet over medium heat, add the diced onion and red bell pepper. Cook for 3 minutes until softened. Add the garlic and cook for 30 seconds until fragrant. Stir in the baby spinach and cook for 1 minute until wilted.
- Return the beef to the skillet and stir to combine with the vegetables. Spread the mixture evenly across the bottom of the pan.
- Whisk the eggs. In a bowl, whisk together the eggs, milk (or cream), parsley, chives, and thyme until well combined. Season with a pinch of salt and pepper.
