Beef Meatball Bowl

Juicy grass-fed beef meatballs over cauliflower rice with tomato sauce.

Ingredients

Beef Meatballs

  • 1 lb grass-fed ground beef
  • 1 egg
  • 2 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped
  • ½ tsp dried oregano
  • ¼ cup almond flour (gluten-free binder)
  • Salt and black pepper to taste
  • 2 tbsp olive oil (for browning)

Bowl Base

  • 4 cups cauliflower rice, steamed or sautéed
  • Fresh basil for garnish

From-Scratch Tomato Sauce

  • 1 can (28 oz) crushed tomatoes
  • 4 cloves garlic, minced
  • ¼ tsp chili flakes
  • 3 tbsp extra-virgin olive oil
  • ½ cup fresh basil leaves, torn
  • Salt and black pepper to taste

Instructions

Make the Tomato Sauce

  1. Heat olive oil in a saucepan over medium heat. Add garlic and chili flakes; cook for 1 minute until fragrant.
  2. Add crushed tomatoes. Season with salt and pepper. Simmer for 15 minutes until thickened.
  3. Stir in fresh basil. Adjust seasoning and set aside.

Make the Meatballs

  1. Combine ground beef, egg, garlic, parsley, oregano, almond flour, salt, and pepper. Mix gently.
  2. Roll into 20 meatballs (about 1½ inches each).
  3. Heat olive oil in a skillet over medium-high heat. Brown meatballs on all sides for 4–5 minutes.

Finish in Sauce

  1. Transfer browned meatballs to the tomato sauce. Simmer together for 10–12 minutes until meatballs are cooked through and sauce has absorbed the meat juices.

Assemble the Bowl

  1. Divide cauliflower rice among four bowls.
  2. Top with meatballs and tomato sauce. Garnish with fresh basil. Serve immediately.
