Ingredients
Beef Meatballs
- 1 lb grass-fed ground beef
- 1 egg
- 2 cloves garlic, minced
- 2 tbsp fresh parsley, chopped
- ½ tsp dried oregano
- ¼ cup almond flour (gluten-free binder)
- Salt and black pepper to taste
- 2 tbsp olive oil (for browning)
Bowl Base
- 4 cups cauliflower rice, steamed or sautéed
- Fresh basil for garnish
From-Scratch Tomato Sauce
- 1 can (28 oz) crushed tomatoes
- 4 cloves garlic, minced
- ¼ tsp chili flakes
- 3 tbsp extra-virgin olive oil
- ½ cup fresh basil leaves, torn
- Salt and black pepper to taste
Instructions
Make the Tomato Sauce
- Heat olive oil in a saucepan over medium heat. Add garlic and chili flakes; cook for 1 minute until fragrant.
- Add crushed tomatoes. Season with salt and pepper. Simmer for 15 minutes until thickened.
- Stir in fresh basil. Adjust seasoning and set aside.
Make the Meatballs
- Combine ground beef, egg, garlic, parsley, oregano, almond flour, salt, and pepper. Mix gently.
- Roll into 20 meatballs (about 1½ inches each).
- Heat olive oil in a skillet over medium-high heat. Brown meatballs on all sides for 4–5 minutes.
Finish in Sauce
- Transfer browned meatballs to the tomato sauce. Simmer together for 10–12 minutes until meatballs are cooked through and sauce has absorbed the meat juices.
Assemble the Bowl
- Divide cauliflower rice among four bowls.
- Top with meatballs and tomato sauce. Garnish with fresh basil. Serve immediately.
