Meal Prep’s Most Reliable Bowl
The burrito bowl earns its popularity honestly: every component holds well, reheats well and travels well. Ground bison keeps this version leaner and more flavourful than the usual beef mince, charring the corn in a dry pan adds a smoky note that raw kernels cannot, and folding lime and coriander through the rice at the end stops it from being an afterthought.

- 500 g (1 lb 2 oz) ground bison
- 400 g (14 oz) tinned black beans, drained and rinsed
- 300 g (1½ cups) long-grain rice, cooked
- 200 g (7 oz) corn kernels
- 2 teaspoons ground cumin
- 1 teaspoon smoked paprika
- 2 limes, juiced
- 2 avocados, sliced
- Large handful fresh coriander, chopped
- 2 tablespoons olive oil
Instructions
- Char the corn. Heat a dry heavy pan over high heat. Add the corn kernels in a single layer and leave undisturbed for 3 minutes until blackened in spots, then toss and repeat once more. Tip out and set aside.
- Cook the bison. Add 1 tablespoon of the olive oil to the same pan over medium-high heat. Cook the ground bison with the cumin, smoked paprika, salt and pepper for 6–7 minutes, breaking it up, until browned and slightly crisp.
- Warm the beans. Stir the drained black beans through the bison along with 3 tablespoons of water. Cook for 2 minutes until heated through and the liquid has been absorbed.
- Dress the rice. Fork the juice of one lime, the remaining olive oil, half the chopped coriander and a good pinch of salt through the cooked rice until evenly distributed and fluffy.
- Build the bowls. Divide the lime rice between four bowls. Add the bison and beans, charred corn and sliced avocado in sections. Finish with the remaining coriander and the juice of the second lime.
