The Best Way to Wake Up a Table
Chilaquiles live in the narrow window between crisp and soft — the tortillas should soak up the sauce without collapsing into mush, which means tossing them through at the very last moment. Ground bison makes this version substantial enough to carry a whole morning, and the smoky chipotle salsa does most of the heavy lifting on flavour.
Ingredients

- 400 g (14 oz) ground bison
- 200 g (7 oz) sturdy corn tortilla chips
- 400 g (14 oz) tinned crushed tomatoes
- 2 chipotle peppers in adobo, finely chopped
- 1 teaspoon ground cumin
- 2 tablespoons olive oil
- 4 large eggs
- 100 g (3½ oz) crumbled feta or queso fresco
- Fresh coriander leaves and sliced radish, to serve
- Sea salt and black pepper, to taste
Instructions
- Brown the bison. Heat 1 tablespoon of the olive oil in a wide skillet over medium-high heat. Add the ground bison with the cumin, salt and pepper, and cook for 6 minutes, breaking it up, until well browned. Transfer to a plate.
- Make the salsa. In the same pan, combine the crushed tomatoes and chopped chipotle. Simmer for 8 minutes, stirring occasionally, until thickened and glossy. Season assertively with salt.
- Fry the eggs. In a separate pan, heat the remaining olive oil over medium heat and fry the eggs until the whites are set and the edges are lacy and crisp. Set aside somewhere warm.
- Toss the chips. Return the bison to the salsa and stir through. Add the tortilla chips and fold them through quickly for no more than 30 seconds, so they are coated but still have structure.
- Serve immediately. Slide the chilaquiles onto a warm platter, top with the fried eggs, and scatter with crumbled feta, coriander leaves and sliced radish. Serve at once, before the chips soften further.
