Ingredients
Bison Patties
- ¾ lb ground bison
- ½ tsp garlic powder
- ½ tsp onion powder
- Salt and black pepper to taste
- 1 tbsp avocado oil (for cooking)
Bowl Base
- 4 cups mixed greens
- 1 large onion, thinly sliced (for caramelizing)
- 1 tbsp butter or ghee
- 4 dill pickle slices
- 4 cherry tomatoes, halved
From-Scratch Special Sauce
- 3 tbsp mayonnaise
- 1 tsp Dijon mustard
- 1 tsp apple cider vinegar
- ¼ tsp smoked paprika
- ¼ tsp garlic powder
- A few dashes of hot sauce
- Salt to taste
Instructions
Caramelize the Onions
- Melt butter in a skillet over medium-low heat. Add sliced onions with a pinch of salt.
- Cook, stirring occasionally, for 15–18 minutes until deeply golden and sweet. Set aside.
Make the Special Sauce
- Whisk together mayo, Dijon, apple cider vinegar, smoked paprika, garlic powder, and hot sauce. Season with salt. Refrigerate until ready to use.
Cook the Bison Patties
- Season ground bison with garlic powder, onion powder, salt, and pepper. Form into 2 patties.
- Heat avocado oil in a cast-iron skillet over high heat. Cook patties 3–4 minutes per side for medium.
- Rest for 3 minutes before slicing.
Assemble the Bowl
- Divide mixed greens between two bowls.
- Top each with a sliced bison patty, caramelized onions, pickles, and cherry tomatoes.
- Drizzle generously with special sauce. Serve immediately.
