Bison Burger Bowl

Juicy bison patty over greens with caramelized onions and special sauce.

Ingredients

Bison Patties

  • ¾ lb ground bison
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt and black pepper to taste
  • 1 tbsp avocado oil (for cooking)

Bowl Base

  • 4 cups mixed greens
  • 1 large onion, thinly sliced (for caramelizing)
  • 1 tbsp butter or ghee
  • 4 dill pickle slices
  • 4 cherry tomatoes, halved

From-Scratch Special Sauce

  • 3 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • 1 tsp apple cider vinegar
  • ¼ tsp smoked paprika
  • ¼ tsp garlic powder
  • A few dashes of hot sauce
  • Salt to taste

Instructions

Caramelize the Onions

  1. Melt butter in a skillet over medium-low heat. Add sliced onions with a pinch of salt.
  2. Cook, stirring occasionally, for 15–18 minutes until deeply golden and sweet. Set aside.

Make the Special Sauce

  1. Whisk together mayo, Dijon, apple cider vinegar, smoked paprika, garlic powder, and hot sauce. Season with salt. Refrigerate until ready to use.

Cook the Bison Patties

  1. Season ground bison with garlic powder, onion powder, salt, and pepper. Form into 2 patties.
  2. Heat avocado oil in a cast-iron skillet over high heat. Cook patties 3–4 minutes per side for medium.
  3. Rest for 3 minutes before slicing.

Assemble the Bowl

  1. Divide mixed greens between two bowls.
  2. Top each with a sliced bison patty, caramelized onions, pickles, and cherry tomatoes.
  3. Drizzle generously with special sauce. Serve immediately.

Nutrition Notes

Bison is leaner than beef with a superior omega-3 to omega-6 ratio. This bowl is keto-friendly, gluten-free, and high in protein. The from-scratch special sauce avoids seed oils and artificial additives.
