Bison & Sweet Potato Chili

Hearty bison chili with sweet potato, black beans, and smoky chipotle.

Ingredients

  • 1½ lb ground bison
  • 2 medium sweet potatoes, peeled and diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (28 oz) crushed tomatoes
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 red bell pepper, diced
  • 2 chipotle peppers in adobo sauce, minced
  • 1 tbsp adobo sauce
  • 1 cup bison or beef bone broth
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • ½ tsp cinnamon
  • 2 tbsp avocado oil
  • Salt and black pepper to taste
  • Fresh cilantro, lime wedges, and avocado for serving

Instructions

  1. Heat avocado oil in a large pot over medium-high heat. Brown ground bison for 6–7 minutes, breaking apart. Remove and set aside.
  2. In the same pot, sauté onion, garlic, and bell pepper over medium heat for 5 minutes.
  3. Add chipotle peppers, adobo sauce, chili powder, cumin, smoked paprika, and cinnamon. Cook for 1 minute.
  4. Return bison to the pot. Add crushed tomatoes, black beans, sweet potato, and bone broth. Stir to combine.
  5. Bring to a boil, then reduce heat and simmer for 30–35 minutes until sweet potato is tender and chili is thickened.
  6. Adjust seasoning. Serve topped with fresh cilantro, avocado, and lime wedges.

Nutrition Notes

Bison is leaner than beef with a superior omega-3 to omega-6 ratio. Sweet potato provides beta-carotene, potassium, and complex carbohydrates. This chili is paleo-friendly, gluten-free, and dairy-free. Chipotle adds smoky depth without artificial flavoring.
