Bison & Sweet Potato Chili

Ingredients
- 1½ lb ground bison
- 2 medium sweet potatoes, peeled and diced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (28 oz) crushed tomatoes
- 1 medium onion, diced
- 4 cloves garlic, minced
- 1 red bell pepper, diced
- 2 chipotle peppers in adobo sauce, minced
- 1 tbsp adobo sauce
- 1 cup bison or beef bone broth
- 2 tsp chili powder
- 1 tsp ground cumin
- 1 tsp smoked paprika
- ½ tsp cinnamon
- 2 tbsp avocado oil
- Salt and black pepper to taste
- Fresh cilantro, lime wedges, and avocado for serving
Instructions
- Heat avocado oil in a large pot over medium-high heat. Brown ground bison for 6–7 minutes, breaking apart. Remove and set aside.
- In the same pot, sauté onion, garlic, and bell pepper over medium heat for 5 minutes.
- Add chipotle peppers, adobo sauce, chili powder, cumin, smoked paprika, and cinnamon. Cook for 1 minute.
- Return bison to the pot. Add crushed tomatoes, black beans, sweet potato, and bone broth. Stir to combine.
- Bring to a boil, then reduce heat and simmer for 30–35 minutes until sweet potato is tender and chili is thickened.
- Adjust seasoning. Serve topped with fresh cilantro, avocado, and lime wedges.
