Ingredients
- 1½ cups Arborio rice
- 6 cups Nourish Yourself chicken or beef bone broth, kept warm
- 1 medium onion, finely diced
- 3 cloves garlic, minced
- ½ cup dry white wine
- 3 tbsp unsalted butter
- 2 tbsp olive oil
- ¾ cup freshly grated Parmesan cheese
- Salt and white pepper to taste
- Fresh thyme or chives for garnish
Instructions
- Keep bone broth warm in a separate saucepan over low heat throughout cooking.
- Heat olive oil and 1 tbsp butter in a wide, heavy-bottomed pan over medium heat. Sauté onion for 4–5 minutes until translucent. Add garlic and cook for 1 minute.
- Add Arborio rice and stir to coat in the fat. Toast for 2 minutes until the edges turn translucent.
- Pour in white wine and stir until fully absorbed.
- Add warm bone broth one ladle at a time, stirring constantly and waiting until each addition is absorbed before adding the next. This process takes 20–25 minutes.
- When rice is al dente and the risotto is creamy, remove from heat.
- Stir in remaining butter and Parmesan. Season with salt and white pepper.
- Serve immediately, garnished with fresh thyme or chives.
Nutrition Notes
Nourish Yourself Bone broth adds collagen, minerals, and deep savory flavor to this risotto. This dish is gluten-free. The slow-addition technique creates natural creaminess from the rice starch — no cream required. Parmesan provides calcium and umami depth.
