Bone Broth Risotto

Creamy Arborio rice slow-cooked in golden bone broth with Parmesan.

Ingredients

  • 1½ cups Arborio rice
  • 6 cups Nourish Yourself chicken or beef bone broth, kept warm
  • 1 medium onion, finely diced
  • 3 cloves garlic, minced
  • ½ cup dry white wine
  • 3 tbsp unsalted butter
  • 2 tbsp olive oil
  • ¾ cup freshly grated Parmesan cheese
  • Salt and white pepper to taste
  • Fresh thyme or chives for garnish

Instructions

  1. Keep bone broth warm in a separate saucepan over low heat throughout cooking.
  2. Heat olive oil and 1 tbsp butter in a wide, heavy-bottomed pan over medium heat. Sauté onion for 4–5 minutes until translucent. Add garlic and cook for 1 minute.
  3. Add Arborio rice and stir to coat in the fat. Toast for 2 minutes until the edges turn translucent.
  4. Pour in white wine and stir until fully absorbed.
  5. Add warm bone broth one ladle at a time, stirring constantly and waiting until each addition is absorbed before adding the next. This process takes 20–25 minutes.
  6. When rice is al dente and the risotto is creamy, remove from heat.
  7. Stir in remaining butter and Parmesan. Season with salt and white pepper.
  8. Serve immediately, garnished with fresh thyme or chives.
