Ingredients
Chicken
- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- ½ tsp garlic powder
- ½ tsp onion powder
- Salt and black pepper to taste
Wrap Fillings
- 2 large whole-wheat or gluten-free wraps
- 1 ripe avocado, sliced
- 1 cup crisp romaine or butter lettuce, shredded
- 1 medium tomato, sliced
- ¼ red onion, thinly sliced
From-Scratch Herb Aioli
- 4 tbsp mayonnaise
- 1 tbsp fresh flat-leaf parsley, finely chopped
- 1 tbsp fresh chives, finely chopped
- 1 tsp fresh tarragon, finely chopped
- 1 tsp fresh lemon juice
- 1 small garlic clove, minced
- Salt and white pepper to taste
Instructions
Make the Herb Aioli
- Combine mayo, parsley, chives, tarragon, lemon juice, and garlic. Mix well.
- Season with salt and white pepper. Refrigerate until ready to use.
Grill the Chicken
- Brush chicken with olive oil and season with garlic powder, onion powder, salt, and pepper.
- Grill over medium-high heat for 6–7 minutes per side until cooked through (165°F / 74°C internal).
- Rest for 5 minutes, then slice thinly.
Assemble the Wrap
- Spread herb aioli generously over each wrap.
- Layer with lettuce, tomato, red onion, avocado slices, and sliced chicken.
- Roll tightly, slice in half, and serve immediately.
