Instructions
- Brown the elk. Heat the ghee or tallow in a large skillet over medium-high heat. Add the ground elk and season with smoked paprika, garlic powder, salt, and pepper. Cook, breaking up the meat with a spatula, for 4–5 minutes until browned and just cooked through. Transfer to a plate and set aside.
- Sauté the peppers. In the same skillet over medium heat, add the diced red and green bell peppers. Cook for 2–3 minutes, stirring occasionally, until just softened and beginning to colour at the edges.
- Return the elk. Add the browned elk back to the skillet with the peppers and stir to combine. Spread the mixture evenly across the pan and reduce the heat to medium-low.
- Add the eggs. Crack the eggs directly over the elk and pepper mixture. Using a spatula, gently fold and scramble everything together, cooking for 2–3 minutes until the eggs are just set but still soft and creamy. Do not overcook — remove from heat while the eggs still look slightly underdone, as residual heat will finish them.
