Ingredients
- 1½ lb grass-fed ground beef
- 2 cans (15 oz each) kidney beans, drained and rinsed
- 1 can (28 oz) crushed tomatoes
- 1 can (14 oz) diced tomatoes
- 1 medium onion, diced
- 4 cloves garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 cup beef bone broth
- 2 tbsp chili powder
- 1½ tsp ground cumin
- 1 tsp smoked paprika
- ½ tsp cayenne pepper
- ½ tsp dried oregano
- 2 tbsp avocado oil
- Salt and black pepper to taste
- Fresh cilantro, avocado, and lime wedges for serving
Instructions
- Heat avocado oil in a large pot over medium-high heat. Brown ground beef in batches for 6–7 minutes, breaking apart. Remove and set aside.
- In the same pot, sauté onion, garlic, and bell peppers over medium heat for 5 minutes until softened.
- Add chili powder, cumin, smoked paprika, cayenne, and oregano. Cook for 1 minute until fragrant.
- Return beef to the pot. Add crushed tomatoes, diced tomatoes, kidney beans, and bone broth. Stir to combine.
- Bring to a boil, then reduce heat and simmer uncovered for 30–35 minutes until thickened and flavors meld.
- Adjust seasoning. Serve topped with fresh cilantro, avocado, and lime wedges.
