Grass-Fed Beef Chili

Bold smoky chili with grass-fed beef, kidney beans, and warming spices.

Ingredients

  • 1½ lb grass-fed ground beef
  • 2 cans (15 oz each) kidney beans, drained and rinsed
  • 1 can (28 oz) crushed tomatoes
  • 1 can (14 oz) diced tomatoes
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 cup beef bone broth
  • 2 tbsp chili powder
  • 1½ tsp ground cumin
  • 1 tsp smoked paprika
  • ½ tsp cayenne pepper
  • ½ tsp dried oregano
  • 2 tbsp avocado oil
  • Salt and black pepper to taste
  • Fresh cilantro, avocado, and lime wedges for serving

Instructions

  1. Heat avocado oil in a large pot over medium-high heat. Brown ground beef in batches for 6–7 minutes, breaking apart. Remove and set aside.
  2. In the same pot, sauté onion, garlic, and bell peppers over medium heat for 5 minutes until softened.
  3. Add chili powder, cumin, smoked paprika, cayenne, and oregano. Cook for 1 minute until fragrant.
  4. Return beef to the pot. Add crushed tomatoes, diced tomatoes, kidney beans, and bone broth. Stir to combine.
  5. Bring to a boil, then reduce heat and simmer uncovered for 30–35 minutes until thickened and flavors meld.
  6. Adjust seasoning. Serve topped with fresh cilantro, avocado, and lime wedges.

Grass-fed beef is rich in omega-3 fatty acids, CLA, and complete protein. This chili is gluten-free, high in protein, and dairy-free. Kidney beans add fiber and plant-based protein. Warming spices like cumin and smoked paprika provide antioxidants and anti-inflammatory compounds.
