The Leanest Protein on the Menu
Kangaroo is one of the leanest red meats available and carries a clean, slightly sweet flavour that pairs beautifully with roasted pumpkin and rosemary. Because there is so little fat in it, the golden rule is to cook it fast and hot and pull it off early — carry-over heat will finish the job. A soft poached egg on top provides all the richness the dish needs.

- 450 g (1 lb) ground kangaroo
- 500 g (1 lb 2 oz) pumpkin, peeled and cut into 1.5 cm dice
- 2 tablespoons olive oil
- 1 tablespoon finely chopped fresh rosemary
- 1 teaspoon smoked paprika
- 4 large eggs
- 1 tablespoon white vinegar
- 2 handfuls baby rocket
- Sea salt and black pepper, to taste
Instructions
- Roast the pumpkin. Preheat the oven to 220°C (425°F). Toss the diced pumpkin with 1 tablespoon of the olive oil, the rosemary, salt and pepper, spread on a tray, and roast for 18–20 minutes until tender and caramelised at the edges.
- Sear the kangaroo. Heat the remaining oil in a large skillet over high heat until shimmering. Add the ground kangaroo with the smoked paprika and a good pinch of salt. Cook for 3–4 minutes, breaking it up only twice, so it browns rather than steams. Remove from the heat while still slightly pink.
- Poach the eggs. Bring a wide pan of water to a bare simmer and add the vinegar. Crack each egg into a cup and slide it into the water. Poach for 3 minutes for a soft yolk, then lift out with a slotted spoon onto paper towel.
- Combine the hash. Fold the roasted pumpkin through the kangaroo in the warm skillet. Taste and adjust the salt and pepper — lean meat needs decisive seasoning.
- Plate up. Divide the hash between four bowls, top each with a poached egg and a handful of baby rocket, and finish with cracked black pepper.
