Ingredients
Spiced Kangaroo Mince
- 1 lb ground kangaroo
- 1 tsp ground cumin
- 1 tsp smoked paprika
- ½ tsp garlic powder
- ½ tsp chili powder
- Salt and black pepper to taste
- 1 tbsp avocado oil
Lettuce Cups
- 1 head butter lettuce, leaves separated (12 large leaves)
- 1 avocado, diced
- 2 spring onions, thinly sliced
- Fresh cilantro for garnish
- Lime wedges for serving
From-Scratch Mango Salsa
- 1 ripe mango, peeled and finely diced
- ¼ red onion, finely diced
- 1 jalapeño, seeded and minced
- 2 tbsp fresh cilantro, chopped
- 2 tbsp fresh lime juice
- Salt to taste
Instructions
Make the Mango Salsa
- Combine mango, red onion, jalapeño, cilantro, and lime juice. Season with salt.
- Toss gently and set aside to marinate for 5 minutes.
Cook the Kangaroo
- Heat avocado oil in a skillet over medium-high heat. Add ground kangaroo and break apart.
- Season with cumin, paprika, garlic powder, chili powder, salt, and pepper.
- Cook for 6–7 minutes until browned and cooked through.
Assemble the Lettuce Cups
- Arrange 4 butter lettuce leaves per serving on each plate.
- Spoon spiced kangaroo mince into each cup.
- Top with mango salsa, diced avocado, and spring onions.
- Garnish with fresh cilantro and serve with lime wedges.
