Kofta is one of the oldest and most satisfying ways to cook ground meat — spiced, shaped onto skewers and grilled or broiled until beautifully charred on the outside and juicy within. This is summer grilling at its best — bold Middle Eastern spices, a cooling yogurt sauce, and flatbread to wrap it all up.
Ingredients
For the kofta:
- 1 pack HOTRO.ca Bradner Farms Ground Beef Mix (Certified Organic, 100% Grass-Fed BC — 90% beef, 5% liver, 5% heart)
- 1 small onion, grated and squeezed dry
- 3 cloves garlic, minced
- 2 tbsp fresh parsley, finely chopped
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp smoked paprika
- ½ tsp cinnamon
- ½ tsp allspice
- ½ tsp chili flakes (optional)
- 1 tsp sea salt
- ½ tsp black pepper
To serve:
- Warm flatbread or pita
- 1 cup plain full-fat yogurt
- 1 tbsp lemon juice
- 1 clove garlic, minced
- Fresh mint and parsley
- Sliced tomatoes, cucumber and red onion
- Lemon wedges
Instructions
- If using wooden skewers, soak them in water for 30 minutes before grilling.
- Combine the ground beef mix with all the kofta spices, grated onion, garlic and parsley. Mix well with your hands until everything is evenly incorporated. Refrigerate for 30 minutes if time allows — this helps the kofta hold its shape.
- Divide the mixture into 8 equal portions. Shape each portion around a skewer, pressing firmly into a long oval or cylinder about 15cm long.
- Grill over high heat for 3–4 minutes per side until charred and cooked through, or broil in the oven on a rack at high heat for 4–5 minutes per side.
- While the kofta cooks, stir together yogurt, lemon juice and garlic for the sauce. Season with salt.
- Serve kofta on warm flatbread with yogurt sauce, fresh herbs, tomatoes, cucumber and a squeeze of lemon.
