Ingredients
Kofta
- 1 lb ground lamb
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- ½ tsp smoked paprika
- ¼ tsp cayenne pepper
- Salt and black pepper to taste
- 2 tbsp fresh parsley, finely chopped
Salad
- 4 cups baby arugula
- 1 cup roasted red peppers, sliced
- ¼ red onion, thinly sliced
- 2 tbsp fresh mint leaves
From-Scratch Lemon Vinaigrette
- 3 tbsp fresh lemon juice
- 5 tbsp extra-virgin olive oil
- 1 tsp Dijon mustard
- 1 small garlic clove, minced
- Sea salt and black pepper to taste
Instructions
Make the Kofta
- Combine ground lamb, garlic, cumin, coriander, paprika, cayenne, parsley, salt, and pepper in a bowl. Mix well.
- Shape into 9 oval patties (3 per serving).
- Grill or pan-sear over medium-high heat for 4–5 minutes per side until cooked through.
Make the Lemon Vinaigrette
- Whisk together lemon juice, Dijon mustard, and garlic.
- Slowly drizzle in olive oil while whisking to emulsify. Season with salt and pepper.
Assemble the Salad
- Toss arugula with half the vinaigrette and divide among three plates.
- Top with roasted peppers, red onion, and fresh mint.
- Place 3 kofta on each plate and drizzle with remaining vinaigrette.
- Serve immediately.
