Ingredients
Spiced Lamb
- 1 lb ground lamb
- 1 tsp ground cumin
- 1 tsp ground coriander
- ½ tsp cinnamon
- ½ tsp smoked paprika
- 2 cloves garlic, minced
- Salt and black pepper to taste
- 1 tbsp olive oil
Bowl Components
- 3 flatbreads (store-bought or homemade)
- 1 cup cherry tomatoes, halved
- 1 tbsp olive oil (for roasting tomatoes)
- ½ cup dairy-free tzatziki
- ¼ cup fresh mint leaves
- ¼ cup pomegranate seeds
- 2 tbsp toasted pine nuts
Instructions
Roast the Tomatoes
- Preheat oven to 400°F (200°C). Toss cherry tomatoes with olive oil, salt, and pepper.
- Roast for 12–15 minutes until blistered and jammy.
Cook the Lamb
- Heat olive oil in a skillet over medium-high heat. Add ground lamb and break apart.
- Season with cumin, coriander, cinnamon, paprika, garlic, salt, and pepper.
- Cook for 8–10 minutes until browned and fragrant.
Assemble the Bowl
- Place a flatbread in each bowl as the base.
- Spoon spiced lamb over the flatbread.
- Top with roasted tomatoes, a dollop of dairy-free tzatziki, fresh mint, pomegranate seeds, and pine nuts.
- Serve immediately.
