Ingredients
- 2 Bradner Farms Organic Boneless Skinless Chicken Breasts
- 3 tbsp avocado oil or olive oil
- Zest and juice of 1 lemon
- 3 cloves garlic, minced
- 1 tsp fresh thyme leaves
- 1 tsp fresh rosemary, finely chopped
- ½ tsp sea salt
- ¼ tsp black pepper
- Fresh parsley and lemon slices to serve
Instructions
- Combine oil, lemon zest, lemon juice, garlic, thyme, rosemary, salt, and pepper in a bowl to make the marinade.
- Place chicken breasts in a zip-lock bag or shallow dish. Pour marinade over and coat well. Marinate for at least 20 minutes (or up to 4 hours in the fridge).
- Heat a skillet or grill pan over medium-high heat. Remove chicken from marinade and shake off excess.
- Cook chicken for 6–7 minutes per side, until golden and cooked through (internal temp 74°C / 165°F).
