This is the kind of dinner that makes a busy evening feel sorted. Mad Brit sausages roast alongside sweet apples, red onion, and potatoes until everything is caramelized, juicy, and ready for the table from one pan.
Ingredients
- 8 Mad Brit sausages
- 750 g baby potatoes, halved
- 2 apples, cored and cut into wedges
- 1 large red onion, cut into wedges
- 2 tbsp olive oil
- 1 tbsp whole-grain mustard
- 1 tbsp honey
- 1 tsp dried sage or thyme
- Salt and freshly ground pepper
- 125 ml Nourish Yourself Bone Broth
Method
- Heat the oven to 425°F. Add the potatoes, onion, and apples to a large roasting pan. Toss with the olive oil, sage, salt, and pepper.
- Nestle the sausages among the vegetables and roast for 25 minutes.
- Whisk together the mustard, honey, and bone broth. Pour it over the pan and turn the vegetables gently.
- Roast for another 15 to 20 minutes, until the sausages are cooked through and the potatoes are golden.
- Spoon the pan juices over everything and serve with greens, sauerkraut, or crusty bread.
Make it your own
Swap the apples for pears, add a handful of chopped cabbage, or finish with fresh parsley. The bone broth and mustard make a quick pan sauce that ties the whole meal together, no separate gravy required.
