Pork Sausage & Lentil Soup

Hearty lentil soup with crumbled sausage and smoked paprika.

Ingredients

  • 1 lb natural pork sausage (casings removed)
  • 1½ cups green or brown lentils, rinsed
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 can (14 oz) diced tomatoes
  • 5 cups chicken or vegetable broth
  • 1½ tsp smoked paprika
  • 1 tsp ground cumin
  • ½ tsp dried thyme
  • 1 bay leaf
  • 2 tbsp olive oil
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add sausage and cook, crumbling, for 5–6 minutes until browned. Remove and set aside.
  2. In the same pot, sauté onion, garlic, carrots, and celery over medium heat for 5 minutes until softened.
  3. Stir in smoked paprika, cumin, and thyme; cook for 1 minute until fragrant.
  4. Add lentils, diced tomatoes, broth, and bay leaf. Bring to a boil.
  5. Reduce heat and simmer for 20–22 minutes until lentils are tender.
  6. Return sausage to the pot. Stir and simmer for 3 more minutes. Remove bay leaf.
  7. Adjust seasoning. Garnish with fresh parsley and serve.

Nutrition Notes

Lentils are an excellent source of plant-based protein and fiber. Combined with natural pork sausage, this soup is high in protein and dairy-free. Smoked paprika adds depth without any artificial flavoring.
