Pork Sausage & Lentil Soup

Ingredients
- 1 lb natural pork sausage (casings removed)
- 1½ cups green or brown lentils, rinsed
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 medium carrots, diced
- 2 stalks celery, diced
- 1 can (14 oz) diced tomatoes
- 5 cups chicken or vegetable broth
- 1½ tsp smoked paprika
- 1 tsp ground cumin
- ½ tsp dried thyme
- 1 bay leaf
- 2 tbsp olive oil
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium-high heat. Add sausage and cook, crumbling, for 5–6 minutes until browned. Remove and set aside.
- In the same pot, sauté onion, garlic, carrots, and celery over medium heat for 5 minutes until softened.
- Stir in smoked paprika, cumin, and thyme; cook for 1 minute until fragrant.
- Add lentils, diced tomatoes, broth, and bay leaf. Bring to a boil.
- Reduce heat and simmer for 20–22 minutes until lentils are tender.
- Return sausage to the pot. Stir and simmer for 3 more minutes. Remove bay leaf.
- Adjust seasoning. Garnish with fresh parsley and serve.

Lentils are an excellent source of plant-based protein and fiber. Combined with natural pork sausage, this soup is high in protein and dairy-free. Smoked paprika adds depth without any artificial flavoring.
