Sausage Stuffed Peppers

Vibrant bell peppers filled with seasoned sausage, rice, and cheese.

Ingredients

  • 4 large bell peppers (mixed colours), tops cut off and seeds removed
  • 1 lb natural pork sausage (casings removed)
  • 1 cup cooked white or brown rice
  • 1 can (14 oz) diced tomatoes, drained
  • 1 medium onion, finely diced
  • 3 cloves garlic, minced
  • 1 tsp dried Italian herbs
  • ½ tsp smoked paprika
  • 1 cup shredded mozzarella or cheddar cheese
  • 2 tbsp olive oil
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Lightly oil a baking dish large enough to hold the peppers upright.
  2. Heat olive oil in a skillet over medium-high heat. Add sausage and cook, crumbling, for 5–6 minutes until browned.
  3. Add onion and garlic; cook for 3 minutes until softened.
  4. Stir in diced tomatoes, Italian herbs, and smoked paprika. Cook for 2 minutes.
  5. Remove from heat. Fold in cooked rice. Season with salt and pepper.
  6. Stand peppers upright in the baking dish. Fill each generously with the sausage mixture.
  7. Top each pepper with shredded cheese.
  8. Cover with foil and bake for 25 minutes. Remove foil and bake for a further 10 minutes until cheese is golden and bubbling.
  9. Garnish with fresh parsley and serve.

Nutrition Notes

Natural pork sausage is a rich source of protein and B vitamins. Bell peppers are exceptionally high in vitamin C. This dish is gluten-free and high in protein. Using natural sausage without fillers or preservatives keeps this meal clean and wholesome.
