Sausage Stuffed Peppers

Ingredients
- 4 large bell peppers (mixed colours), tops cut off and seeds removed
- 1 lb natural pork sausage (casings removed)
- 1 cup cooked white or brown rice
- 1 can (14 oz) diced tomatoes, drained
- 1 medium onion, finely diced
- 3 cloves garlic, minced
- 1 tsp dried Italian herbs
- ½ tsp smoked paprika
- 1 cup shredded mozzarella or cheddar cheese
- 2 tbsp olive oil
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat oven to 375°F (190°C). Lightly oil a baking dish large enough to hold the peppers upright.
- Heat olive oil in a skillet over medium-high heat. Add sausage and cook, crumbling, for 5–6 minutes until browned.
- Add onion and garlic; cook for 3 minutes until softened.
- Stir in diced tomatoes, Italian herbs, and smoked paprika. Cook for 2 minutes.
- Remove from heat. Fold in cooked rice. Season with salt and pepper.
- Stand peppers upright in the baking dish. Fill each generously with the sausage mixture.
- Top each pepper with shredded cheese.
- Cover with foil and bake for 25 minutes. Remove foil and bake for a further 10 minutes until cheese is golden and bubbling.
- Garnish with fresh parsley and serve.
Nutrition Notes
Natural pork sausage is a rich source of protein and B vitamins. Bell peppers are exceptionally high in vitamin C. This dish is gluten-free and high in protein. Using natural sausage without fillers or preservatives keeps this meal clean and wholesome.
