Sausage & White Bean Soup

Rustic white bean soup with natural sausage and rosemary.

Ingredients

  • 1 lb natural pork sausage (casings removed)
  • 2 cans (15 oz each) cannellini or great northern beans, drained and rinsed
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 2 stalks celery, diced
  • 2 medium carrots, diced
  • 1 can (14 oz) diced tomatoes
  • 5 cups chicken broth
  • 2 sprigs fresh rosemary
  • 1 tsp dried thyme
  • 1 bay leaf
  • 2 cups baby spinach or kale, roughly chopped
  • 2 tbsp olive oil
  • Salt and black pepper to taste
  • Fresh parsley and crusty bread for serving (optional)

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add sausage and cook, crumbling, for 5–6 minutes until browned. Remove and set aside.
  2. In the same pot, sauté onion, garlic, celery, and carrots over medium heat for 5 minutes until softened.
  3. Add diced tomatoes, chicken broth, rosemary sprigs, thyme, and bay leaf. Bring to a boil.
  4. Add white beans and return sausage to the pot. Reduce heat and simmer for 18–20 minutes.
  5. Remove rosemary sprigs and bay leaf. Stir in spinach or kale and cook for 2 minutes until wilted.
  6. Adjust seasoning with salt and pepper. Garnish with fresh parsley and serve.

Nutrition Notes

White beans are an excellent source of plant-based protein and fiber. Combined with natural pork sausage, this soup is high in protein and dairy-free. Fresh rosemary and thyme add aromatic depth without any artificial flavoring.
