Sausage & White Bean Soup

Ingredients
- 1 lb natural pork sausage (casings removed)
- 2 cans (15 oz each) cannellini or great northern beans, drained and rinsed
- 1 medium onion, diced
- 4 cloves garlic, minced
- 2 stalks celery, diced
- 2 medium carrots, diced
- 1 can (14 oz) diced tomatoes
- 5 cups chicken broth
- 2 sprigs fresh rosemary
- 1 tsp dried thyme
- 1 bay leaf
- 2 cups baby spinach or kale, roughly chopped
- 2 tbsp olive oil
- Salt and black pepper to taste
- Fresh parsley and crusty bread for serving (optional)
Instructions
- Heat olive oil in a large pot over medium-high heat. Add sausage and cook, crumbling, for 5–6 minutes until browned. Remove and set aside.
- In the same pot, sauté onion, garlic, celery, and carrots over medium heat for 5 minutes until softened.
- Add diced tomatoes, chicken broth, rosemary sprigs, thyme, and bay leaf. Bring to a boil.
- Add white beans and return sausage to the pot. Reduce heat and simmer for 18–20 minutes.
- Remove rosemary sprigs and bay leaf. Stir in spinach or kale and cook for 2 minutes until wilted.
- Adjust seasoning with salt and pepper. Garnish with fresh parsley and serve.
