Ingredients
- 1.5 kg stewing beef, cut into large pieces
- 2 tbsp cooking fat
- 1 large onion, diced
- 3 carrots, chopped
- 3 garlic cloves, minced
- 2 tbsp tomato paste
- 750 ml Nourish Yourself Bone Broth
- 500 ml water
- 4 potatoes, cut into chunks
- 2 tsp dried thyme
- 1 bay leaf
- Salt and freshly ground pepper
Method
- Season the beef generously with salt and pepper. Brown it in batches in a heavy pot, then set it aside.
- Add the onion and carrots to the pot and cook until the onion softens. Stir in the garlic and tomato paste.
- Return the beef to the pot. Add the bone broth, water, thyme, and bay leaf. Bring to a gentle simmer.
- Cover and cook on low for 2 to 2½ hours, until the beef is tender.
- Add the potatoes for the final 35 to 40 minutes, until they are soft but still holding their shape.
- Remove the bay leaf, taste for seasoning, and serve with warm bread or a simple green salad.
