Slow-Cooked Bone Broth Soup

Ingredients
- 8 cups Nourish Yourself beef or chicken bone broth
- 3 medium carrots, peeled and sliced
- 3 medium parsnips, peeled and diced
- 2 medium turnips, peeled and diced
- 2 stalks celery, sliced (leaves included)
- 1 medium zucchini, diced
- 1 cup green beans, trimmed and halved
- 2 tsp dried thyme
- 1 tsp dried rosemary
- 2 bay leaves
- 2 tbsp olive oil
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add carrots, parsnips, and turnips. Sauté for 5 minutes until lightly golden.
- Add celery, thyme, rosemary, and bay leaves. Cook for 2 minutes until fragrant.
- Pour in Nourish Yourself bone broth. Bring to a boil, then reduce heat to low.
- Simmer for 20 minutes until root vegetables are nearly tender.
- Add zucchini and green beans. Simmer for a further 10 minutes.
- Remove bay leaves. Adjust seasoning with salt and pepper.
- Ladle into bowls and garnish with fresh parsley. Serve hot.
