There's something deeply satisfying about a well-spiced kofta kebab — the kind that's crispy on the outside, juicy in the middle, and fragrant with warm spices. This is a recipe I put together using our Bradner Farms Certified Organic Grass-Fed Ground Beef, and it's become a go-to at our place.

The key is the beef. Grass-fed, grass-finished beef has a richer, more complex flavour than conventional ground beef — and with this sheet pan recipe its easier to get that perfect kebab without fear of of them breaking. A little honey rounds out the spices, and the lemon zest and juice keep everything bright.

Ingredients

  • 2 lb Bradner Farms Certified Organic Grass-Fed Ground Beef
  • ¼ cup fresh flat-leaf parsley, finely chopped
  • Zest of ½ lemon
  • 2 tsp lemon juice
  • 2 tsp onion powder
  • 1½ tsp garlic powder
  • 1½ tsp salt
  • ¾ tsp black pepper
  • 2 tsp cumin
  • 2 tsp smoked paprika
  • 1 tsp ground coriander
  • ¼ tsp cinnamon
  • 1 tsp honey

Method

  1. Mix the kebab mixture. Combine all ingredients in a large bowl. Mix well with your hands until the spices are evenly distributed — don't overwork it, but make sure everything is incorporated. Cover and refrigerate for at least 30 minutes (up to overnight) to let the flavours develop.
  2. Shape the kebabs. Put the kebab mix onto a flat sheet pan and spread out evenly across the sheet pan. Then mark out finger sized lines down the pan. This ensures when they are cooked you can simply slice from your cuts into kebabs.
  3. Grill. Preheat your oven to 350F. Cook for around 12-15 minutes. Internal temperature should reach 71°C (160°F).
  4. Rest and serve. Let the kebabs rest for a couple of minutes before serving. Serve with flatbread, a simple yogurt sauce, sliced tomatoes, and fresh parsley.

Notes

  • Chilling the mixture before shaping makes it much easier to work with and helps the kebabs hold together.
