How to finish it:
Place skin-side down in a cold pan, heat to medium-high, and cook until the skin is deeply golden and crispy — about 8–10 minutes. Flip briefly to warm through. Serve with lentils, roasted potatoes, or a simple green salad with mustard vinaigrette.
