How to cook them:
Bring to room temperature, season generously with salt and pepper. Sear in a hot cast iron pan with butter and thyme for 3–4 minutes per side. Rest 5 minutes before serving. Pairs beautifully with applesauce, roasted vegetables, or a mustard cream sauce.
