The Burger That Earns Its Heat
These aren't your average backyard burgers. Built on a base of certified organic ground chicken from Bradner or Thomas Reid Farms, spiked with gochujang and sesame, and crowned with a heap of tangy kimchi, these patties bring serious Korean BBQ energy to your grill.

Ingredients
Chicken Patties
- 500g HOTRO Ground Chicken
- 2 tbsp gochujang (Korean chili paste)
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 2 cloves garlic, minced
- 1 tsp fresh ginger, grated
- 2 green onions, finely sliced
- Salt and pepper to taste
Gochujang Mayo
- 3 tbsp mayonnaise
- 1 tbsp gochujang
- 1 tsp rice vinegar
- 1 tsp sesame oil
To Serve
- ½ cup HOTRO Kimchi, roughly chopped
- 4 brioche or sesame buns, toasted
- Butter lettuce leaves
- Sliced cucumber
- Toasted sesame seeds
Method
Step 1 — Make the Patties
Combine ground chicken, gochujang, soy sauce, sesame oil, garlic, ginger, and green onions in a bowl. Mix gently until just combined — don't overwork it. Divide into 4 equal patties, about 2cm thick. Press a small indent in the centre of each to prevent puffing. Refrigerate for 15 minutes to firm up.
Step 2 — Make the Gochujang Mayo
Whisk together mayo, gochujang, rice vinegar, and sesame oil. Taste and adjust heat. Refrigerate until needed.
Step 3 — Grill
Preheat grill to medium-high (about 200°C). Oil the grates well — chicken patties are lean and will stick. Grill patties for 5–6 minutes per side until cooked through (internal temp 74°C). Do not press down. Toast buns cut-side down for the last minute.
Step 4 — Build the Burger
Spread gochujang mayo generously on both bun halves. Layer with butter lettuce, the chicken patty, a good heap of chopped kimchi, sliced cucumber, and a sprinkle of sesame seeds. Serve immediately.
Tips
- Chicken patties are delicate — chill them well before grilling and use a thin spatula.
- For extra flavour, brush patties with a little extra gochujang mixed with honey in the last 2 minutes of grilling.
- Kimchi brine makes an excellent addition to the mayo for extra tang.
