What Is Dashi?
Traditional dashi is a Japanese broth made from kombu (dried kelp) and katsuobushi (bonito flakes) — two ingredients with deep roots in Japanese culinary and medicinal tradition. It’s the base of miso soup, ramen, udon, and hundreds of other dishes. Clean, umami-rich, and deeply savoury, it’s one of the most flavourful broths in the world.

Prebiotic Kombu
Kombu is one of the richest natural sources of prebiotic fibre — specifically fucoidan and alginate, compounds that selectively feed beneficial gut bacteria. Bonito (Katsuobushi)
