How to Cook Lumina Rack of Lamb
- Thaw overnight in the fridge, then bring to room temperature 45 minutes before cooking
- Season with a herb and garlic crust — rosemary, thyme, Dijon, and breadcrumbs work beautifully
- Sear fat-side down in a hot oven-safe pan until golden, 2–3 minutes
- Roast at 220°C / 425°F for 20–25 minutes to medium-rare
- Target internal temp: 57°C / 135°F for medium-rare · 63°C / 145°F for medium
- Rest 10 minutes before carving between the bones — the chicory-finished fat caramelises beautifully
- Tip: Stand the two racks together in a "guard of honour" formation for a stunning presentation
