Lumina Rack of Lamb from New Zealand's South Island arrives frenched, frozen, and ready to impress. Grass-fed and finished on chicory for the last 30 days, with Wagyu-like marbling and a flavour that is simply extraordinary. Each pack contains 1 frenched rack, approximately 900g, (twice the size of a normal rack of lamb) with 7–8 chops per rack — perfect for a dinner party, a special occasion (or just a very good Tuesday!). How to Cook Lumina Rack of Lamb
- Thaw overnight in the fridge, then bring to room temperature 45 minutes before cooking
- Season with a herb and garlic crust — rosemary, thyme, Dijon, and breadcrumbs work beautifully
- Sear fat-side down in a hot oven-safe pan until golden, 2–3 minutes
- Roast at 220°C / 425°F for 25–35 minutes to medium-rare
- Target internal temp: 57°C / 135°F for medium-rare · 63°C / 145°F for medium
- Rest 10 minutes before carving between the bones — the chicory-finished fat caramelizes beautifully
- Tip: Chef Allen likes his lamb with a home made mint sauce, minted peas and Yorkshire pudding. Ask him for his gluten free Yorkshire recipe. You won't tell the difference from regular puds.
