Grass-fed and finished on chicory for the last 30 days, with Wagyu-like marbling and a flavour that is simply extraordinary. Each pack contains 2 frenched racks, approximately 480–500g each, with 7–8 chops per rack — perfect for a dinner party, a special occasion, or a very good Tuesday.

How to Cook Lumina Rack of Lamb

  • Thaw overnight in the fridge, then bring to room temperature 45 minutes before cooking
  • Season with a herb and garlic crust — rosemary, thyme, Dijon, and breadcrumbs work beautifully
  • Sear fat-side down in a hot oven-safe pan until golden, 2–3 minutes
  • Roast at 220°C / 425°F for 20–25 minutes to medium-rare
  • Target internal temp: 57°C / 135°F for medium-rare · 63°C / 145°F for medium
  • Rest 10 minutes before carving between the bones — the chicory-finished fat caramelises beautifully
  • Tip: Stand the two racks together in a "guard of honour" formation for a stunning presentation
