How to cook it:
For crispy pork belly: score the skin, season generously, roast at 450°F for 30 minutes then reduce to 325°F for 1.5–2 hours. For braised pork belly: slow-cook in soy, ginger, and star anise for 2–3 hours until meltingly tender. Also excellent sous vide at 170°F for 10 hours.
