How to cook it:
Season with salt, pepper, and herbs. Sear on all sides in a hot pan, then roast at 425°F for 15–20 minutes to 145°F internal. Rest 5 minutes before slicing. Also excellent stuffed, wrapped in bacon, or sliced into medallions and pan-seared.
