Lumina Lamb is a premium pasture-raised breed from the South Island of New Zealand, renowned for its uniquely mild, non-gamey flavour and extraordinary tenderness. Finished on chicory and clover, hand-butchered, boned, rolled, and tied — this is a centrepiece roast that delivers every time.

How to Cook Lumina Boneless Leg of Lamb

  • Bring to room temperature — remove from fridge 45–60 minutes before cooking
  • Season generously — rosemary, garlic, lemon zest, and olive oil are classic; or keep it simple with salt and pepper to let the flavour shine
  • Roasting (rolled): 180°C / 350°F — approx. 25 minutes per 500g for medium. Rest 15–20 minutes before carving
  • BBQ (unrolled flat): High heat, 6–8 minutes per side, then rest. Finish with a squeeze of lemon
  • Slow cook: 6–8 hours on low with stock, garlic, and herbs for fall-apart results
  • Target internal temp: 60°C / 140°F for medium-rare · 65°C / 150°F for medium

What Is Lumina Lamb Good For?

Lumina's unique genetics and chicory-clover finishing diet produce a lamb that is leaner than conventional breeds yet richer in omega-3 fatty acids and conjugated linoleic acid (CLA). It's an excellent source of complete protein, iron, zinc, and B12 — ideal for everything from a Sunday family roast to an elegant dinner party centrepiece.
