How to cook them:
Sear on all sides, then braise in red wine, tomatoes, and aromatics at 325°F for 2.5–3 hours. The chicory-finished fat melts into the sauce for an unbelievable depth of flavour. Serve over creamy mashed potatoes or risotto.
