How to cook it:
Score the skin, season generously, and roast at 400°F breast-side up for 30 minutes, then reduce to 350°F for 1.5–2 hours. Drain the fat every 30 minutes. Rest 20-30 minutes before carving for best results. Save every drop of that rendered fat, and use them on your next batch of roast potatoes.
