There's a reason whole duck is the centrepiece of great kitchens — rich, deeply flavoured dark meat, skin that renders to a golden crisp, and enough duck fat left over to make the best roast potatoes of your life. Our Fraser Valley whole duck is free-range, antibiotic-free, and raised without preservatives or additives — a premium BC bird from one of the province's most respected poultry farms.

4–8lbs, average 5–7lbs. $60 deposit collected at time of order; all overages fully refunded.

How to cook it:
Score the skin, season generously, and roast at 400°F breast-side up for 30 minutes, then reduce to 350°F for 1.5–2 hours. Drain the fat every 30 minutes. Rest 20-30 minutes before carving for best results. Save every drop of that rendered fat, and use them on your next batch of roast potatoes.
